Why Stainless Steel for Knives Requires Cr ≥ 13%


Rust resistance baseline: Only when Cr content is ≥13% can stainless steel form a stable passivation film. This meets the anti-rust requirements for food-contact knife products, preventing blade rust that affects use experience and product reputation.

Balanced material performance: Stainless steel with Cr content below 13% has poor rust resistance and is prone to corrosion, making it unqualified for tableware and knives. Cr ≥13% ensures qualified rust resistance while supporting thermal hardening treatment, suitable for blade manufacturing. However, excessively high chromium content (over 18%) will reduce hardenability, weaken sharpness retention and greatly increase production costs.
