GB vs ASTM Stainless Steel Grade Comparison

Many global buyers are confused by stainless steel grade naming differences. Chinese knife manufacturers use GB national standard grades (3Cr13, 4Cr13, 5Cr15MoV), while overseas markets adoptASTM numerical grades (420/440 series). These are just different naming systems with no actual quality gap. The following three grades are the most common materials for Chinese kitchen and outdoor knives:
3Cr13 (30Cr13) / Equivalent to ASTM 420J2
3Cr13 matches the international ASTM 420J2 standard. It offers reliable rust resistance, fine polishing performance and moderate hardness. Cost-effective and easy to sharpen, it is widely used for household knives, fruit knives, kitchen scissors and entry-level outdoor cutting tools.
4Cr13 (40Cr13) / Equivalent to ASTM 420HC
4Cr13 is an upgraded version of 3Cr13, equivalent to ASTM 420HC. With higher carbon content, it features better hardness, wear resistance and edge retention. It balances great corrosion resistance and durability, making it the mainstream material for mid-grade kitchen knives, precision scissors and outdoor tools.
5Cr15MoV / Modified 420MoV (No official ASTM equivalent)
5Cr15MoV is a China-developed high-performance knife steel with no official ASTM standard, internationally known as modified 420MoV. Molybdenum and vanadium elements enhance its toughness, wear resistance and anti-rust ability. It delivers stable performance and excellent edge retention, ideal for high-end kitchen knife sets and premium outdoor camping cutlery.
